Sorry -- on my mobile I missed that part.
You have set all these things and are you saying that all NEW orders are still coming in "Cancelled," or are you still looking at old orders?

Ah, that was very silly of me.
In my PayPal Payments Standard extension, I looked at the tab called "Order Status" and ALL of the order statuses were set to "Canceled".
I changed them all to appropriate settings.

In the case of my host (Dreamhost) it's critical that the email's FROM address be a hosted mailbox with a domain that matched the domain of the store.
