Well, you are obviously caching responses to requests you should not with Varnish reverse proxy.
Reverse proxies are great and easy for static content, for dynamic user specific content they become more difficult.
So either learn how to set that up properly or lose it.

That also raises issues as value 2 makes paypal prompt customers to provide a shipping address, which means they will have to provide it twice (OC and PP) and can then be different from oneanother. no_shipping values: 0 — prompt for an address, but do not require one 1 — do not prompt for an address...

When you use mail, OC has very little to do with it.
When using mail, OC sets the sendmail_from value in php.ini, adds that mail parameter as a header and invokes the php mail function, that is it.
Everything else is handled by your php installation/setup so I am pretty sure the issue lies there.

In the above code you can just replace:

class="text-green" with style="color:green"
class="text-orange" with style="color:orange"
class="text-red" with style="color:red"

or use any colors you like.
