I need to update two stores from 1.5.6.4 to the latest 2.1.0.2, but I cannot find any official upgrade instructions. I see lots of people with errors and questions. Can you please post a link somewhere easy to fine, like pinned to the top of the 2.0 support forum?

There are no official instructions or method.
You might look and see if there are instructions here in the forum that you wish to attempt which were developed by some from the community or maybe hire someone if you wish to try and have an upgraded store to the latest version.
