I have a product I wish to add 2 shipping rate options to. I have duplicated the Flat Rate and added the info including the 2 separate geozones. But I want the Text next to the radio buttons in checkout shipping to be customised (North Island and South Island). How can I do this? thanks

Language changes can be made in the corresponding language Files,
in your case, probably in the shipping subsections. Just search for the
keyword, to find em all.
