What bugs do you need fixed? 1.5.5.1 is pretty stable.
OpenCart 2.0.0 is going to be a whole batch of new problems as it is a major milestone.

There are few things which are fixed in the new 2.0 version but didnt make it to the 1.5.5.1 branch.
\admin\model\setting\setting.php Lines 37 and 49 UDPATE vs UPDATE (spellcheck) and a missing apostrophe after quote > "' WHERE `group`

\catalog\controller\product\search.php / filter_tag vs tag change

\catalog\view\javascript\common.js Line 71

if ($.browser.version <= 7) { vs new if ( ($.browser.version <= 7) || ($.browser.version == 10) ) {

that is just a quick view of what I have in my developement version.

Really need some help from you lovely people, would 1.5.4.1 to 1.5.5.1 be a straight upgrade? ie. would it affect my current template (custom template) and most importantly the current extensions?

some minor changes would be required for your template from v1.5.4.1 to v1.5.5.1. It's the header search, and the search page. Don't think there's anything else though

Strange...perhaps there was some issue with it? Try contacting the OpenCart team and see what they say about it, and let us know.

For now, you can access the latest 1.5.5.x in the branches section of the github project:

https://github.com/opencart/opencart/tree/v1.5.5.x

It may not exactly match your version, but it should be most of the same files (with only improvements, hopefully).
