I have searched and cannot find where the instructions are to change things to make the default quantity for a product as well as all options to something else. Or to turn those items all off together. We do not track any inventory via the system.

easiest solution is to go to admin > system > settings > [options tab]

Set "Show Out Of Stock Warning" to No
Set "Stock Checkout" to yes.

Stock is now ignored.

In answer to your question, there is no setting to change the default values. As stock does not matter to you, then when you add a product, set the "Subtract Stock" to no.

To set a default quantity for a product you must adjust Minimum Quantity value. But this will also restrict the minimum quantity customer can purchase.

Thank you for the response. That info did answer a quastion I had on that setting. However what I am speaking about is when you add an option. If the option value has no quantity it does not show up on the user product ordering screen. I would like quantity of the option value to default to 999. See image. Image

That appears to be exactly what I am trying to accomplish. Although I admit, I am unsure of how to convert that extension for version 3.0.3.2. I uploaded it manually, but it did not work via VQMOD.

You need to set the 'Subtract Stock' to No, and use quantity values for your product options greater than zero.
You can use the Export/Import tool to edit all your products (worksheet ProductOptions) in one go.

Or you could just run a sql statement to change quantity to whatever you want
