Dear friends, I need this feature, I dont known If is possible to adapt opencart to add this:

Mark all sold out items with a sold out image (css) or display the images with less opacity (css) at list: example:

And disable the + little button at list if the item is sold out.

Next...

Changing the add to cart button to a disabled button like this:

Is this possible?? How?

On the product page you can check what the Availability is. If it is "Out of Stock" you can use PHP routines to change the product template to the way you want it.

For Category pages etc, you are going to have to add the Availability variable to the product data in the controller - then you can do the same check and output a "Sold Out" image if it is "Out of Stock".
