Well you should first contact the one who has created that theme to ask him/her how could you get a layout for that...

It occurs to me that the latest products would not be accomplished with a theme, but an extension since you need a model in the MVC to query the database for the product dates. I am creating one for my job and if you have not yet found a way to do this, I will share the extension with you.
Have you searched the extensions directory?

Andy, what version of OC are you running, because in 1.5.x there is already an module for Latest Products.

Go here and open this file in your text editor: catalog/view/theme/default/template/module/latest.tpl
It is only 28 lines. You can edit the HTML anyway you want. There is a little PHP in there and if you are comfortable with both, you should have no problem.
