basically all the .tpl files in catalog/view/theme/YOURTHEME/template/catalog folder and also the bestseller.tpl latest.tpl featured.tpl and special.tpl in catalog/view/theme/YOURTHEME/template/module folder

The only way to remove the add to cart buttons is to edit your template
I will advise that if you are using the default template, to copy that template first
