My error log is empty despite having a line of code with $this->log->write('Log'); in one of my controllers.
Display errors and log errors are set to yes in my admin settings.
My storage and logs folders have 0777 permissions.

What could I be missing?

no, oc error logging is separate from standard php error logging which may be useful if you do not have access to the php error logs.

This is wrong , insecure and could be the problem.

Folders should be 755
Files should be 644

Some hosts will see you have set 777 and block things.
