I wonder if I can delete or disable the Shipping Method when someone wants to finalise an order. (I want to contact the customer on the phone and discuss every order about the shipping costs, because there are different tarrifs for each product depending on weight and distance). I don't want to use the flat rate option or free shipping, I only want to let the costumer to finish his order, and discuss with him after that about the shipping costs. If I don't chose anything for the shipping method, the costumer won't be able to finalise his order.

The easiest way for you is to enable Free Shipping or any other shipping method with zero cost and rename it to something like "Delivery will be calculated later".

Why you don't set Required shipping to No when you add/edit a product?

If I simply set NO the required shiping option when add/edit a product, I still cannot complete an order, that step (payment method) still doesn't let me go further. It worked at the moment thekrotek's idea, enable free shipping with 0 cost, with the text "Delivery will be calculated later"
I have a shipping module based on geozones with rates for each product. This module allows you to add delivery rates for each product and each geozone at the same time. So you don't need a discussion about shipping rates, just set it in the admin and the order can be done without any discussion...
