E-shop is OC 3.0.3.2. I have the following problem:
- we are selling on-stock goods, but we are delivering products by request as well;
- lets imagine a product t-shirt with different sizes;
- there are 2 x S, 4 x M on stock, other words - 6 in total;
- customer is ordering 10 x XL
- quantity will become -4, stock status will become "out of stock"
- but I have sizes on stock.
Please advise is there any solution for this issue?

If I understand your question correctly.
You can make ALL the options available in your stock as IN
S - 2
M - 4
L - 0
XL - 0
XXL - 0
Then Only the selected item like XXL will reduce stock for XXL and NOT S M L etc
Then
Choose text like Pre Order in catalog>products>data>out of stock options.
I guess you know how to make the options in options and assign them.
You can make ALL the options available in your stock as IN

Upon a successful checkout both the product stock as well as the stock for the chosen product option are updated. Just make sure you have enabled the 'Subtract Stock' for both the product and your size option.

I think this is as much about how you manage STOCK in the shop - Items that are 0 stock maybe DO NOT select subtract stock only items with a positive number stock value to subtract from stock. There's not much point to have negative stock number anyway, maybe its different for you.
Then
As Mike says above check the box in dashboard>settings>shop>options>stock checkout.
Allow customers to checkout when stock is 0
That will solve your problem without technical difficulty
It does have its purpose for inventory assets based on accountability management.There's not much point to have negative stock number anyway
