This extension disables the ability to select an option that has 0 (zero) quantity, and puts an "Out Of Stock" text next to. You can change the "Out Of Stock" text to whatever other text you want.

To change the text

in \ catalog \ language \ en-gb \ product \ product.php
Change the value of $ _ ['text_outstock'] variable.
