By default sort order of Products in Categories are Ascending and depend on the sort order number each product has.
This will change the default sort order to Alphabetically A - Z in Categories for products. It will not disable the default sort order - your users still will have the chance to apply different sort order from the dropdown menu.

You can easily install / uninstall / disable via OCMOD modifications in admin.
